Description
This Creamy Tomato Soup is a grown-up version of a classic comfort food. Serve with a great
grilled cheese and your loved ones will feel like you are hugging them.
Ingredients
2 tablespoons Olive Oil
2 Tablespoons Salted Butter
3 Garlic Cloves
2 (28 oz) cans of Crushed Tomatoes
2 cups Vegetable Stock
¼ cup Fresh Basil
1 Tablespoon Sugar
½ teaspoon black/white Pepper
½ cup Heavy Cream
Instructions
Over medium heat add the olive oil and butter to a large saucepan. Saute chopped onions
until softened and slightly caramelized. Add the minced garlic to the chopped onions and
saute until fragrant, about 30 seconds. Add the 2 cans of crushed tomatoes, veg stock, basil,
sugar and pepper, Bring to a boil, reduce heat and let simmer for 15 minutes. Blend with an
immersion blender (food processor/blender) until smooth. Add heavy cream, stirl to
incorporate and simmer for 5 minutes. Serve hot and garnish as desired.
